Barefoot Contessa’s Lemon Bars

Deliciously sweet lemon bars with a shortbread crust and a rich lemon filling. Don’t forget to dust the bars with powdered sugar while they’re still hot!


Ingredients

CRUST:
1/2 pound unsalted butter, room temperature
1/2 cup granulated sugar
2 cups all-purpose flour
1/8 teaspoon kosher salt
FILLING:
6 extra-large eggs, room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup all-purpose flour
Confectioners’ sugar, for dusting
