Ingredients:

4 large potatoes (Yukon Gold or Russet work well)
3 tbsp melted butter
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
2 cloves garlic, minced
1 tsp dried thyme (or fresh, finely chopped)
Salt and pepper to taste
Fresh parsley, chopped (for garnish).
